let's make meringues, our ultimate sugar dream

4 egg whites
200 g caster sugar
a pinch of salt
preheat the oven to 90 Âșc
line 2 baking trays with parchment paper.
place the egg white and salt in the perfectly clean bowl of an electric mixer, or use an electric hand whisk.
beat the egg whites until they form stiff peaks.
then, while continuing to whisk, add the sugar a tablespoon at the time until the mixture is thick and glossy.
place freeform shapes with 2 metal spoons on the baking trays.
bake for 45-60 minutes or longer, until the meringues are dry.
turn off the oven and let the meringues cool in the oven, with the door slightly ajar.
