ooooh yesss, it's bellini time.
absolutely do make bellini's during the coming days, the peaches are at their best and it's such an utterly delicious drink, and dead easy to make. skin a ripe peach, preferably a white peach but any good ripe peach will do, place in the kitchen machine and process to a smooth purée. place in refrigerator until completely chilled. spoon the purée in 2 glasses and fill up with chilled prosecco. summer in a glass. image: paul lowe via taverne agency
