1 leaf of gelatin sets 100 ml liquid. let the gelatin soften in a bowl with water, bring the wine to a simmer, squeeze the gelatin leaves of excess water and add to the wine. stir from time to time until it is dissolved. fill some beautiful glasses with 2/3 of the liquid, let cool and place in the refrigerator. once the gelatin has a firmish surface, add the strawberries. now gently reheat the remaining gelatin mixture, be aware, you should be able to out your finger into it! if it gets too hot it won't set any more. let it cool a little and top of the glasses with it. refrigerate for several hours until set. serve with whipped cream on the side. or even more chic, with fried elderflower blossoms, sprinkled with powdered sugar…….ah!
