traditionally asparagus harvesting starts in the second week of april. we always buy them directly from a farmer, we make a trip to the country of it. we eat the first asparagus of the season as pure as they are, with melted butter. optionally, add hard boiled eggs & thick slices of ham and sprinkle with flatleaf parsley. images: john dummer via taverne agency
