vedge, a cookbook by the owners of probably the best vegan restaurant in the world
the most exciting vegetable cooking in the us is happening at vedge, a restaurant in philadelphia run by richard landau and kate jacoby. in this book they share their passion for ingenious vegetable cooking. the more than 100 recipes - such as fingerling potatoes with creamy worcestershire sauce, pho with roasted butternut squash, seared french beans with caper bagna cauda, and eggplant braciole, (my god it all sounds soooo delicious) - explode with flavour but are surpisingly straight forward to prepare.
