pie with celery root & sage
150 gr celery root, peeled and cut in large chunks
3 potatoes, peeled and halved
10 sprigs of fresh sage
1 egg tolk
sea salt & black pepper
cook the potatoes and celery for a few minutes, drain well and set aside.
preheat the oven to 180º c.
roll out the pizza dough into a square shape.
cut long strips with a width of 1 cm and roll the ends in opposite sides, then place them on the edges of the pizza dough shape to cover the sides, see photo.
cut the potatoes and the celery root in slices of 2 mm and cover the pizza dough in a roof tile pattern.
divide the sage leaves over the pie, sprinkle with salt & pepper and drizzle with olive oil.
bake in the oven until golden brown.
