home made garam masala

1/8 cup coriander seeds
1/4 tbsp turmuric
1 tbsp cardamom
1 tbsp pepper
1 tbsp close
1 tbsp fennel seeds
2 star anise
1 cinnamon stick
1/4 nutmeg
1 bay leave
dry roast all ingredients over a medium flame while constantly stirring. 
let it cool down.
grind the mixture to a smooth powder, using a pestle & morter, a spice grinder or a coffee grinder.
sieve the powder through a metal strainer. 
store in an air tight container for 3 months.
