we're not true fans of the traditional and very labour intensive british christmas puddings, but for a festive first dinner of the new year we're making an exception for these lovely quickies, by a recipe of robbert koene, images: colin cooke, recipe after the break
makes two puddings
125 g/ 4 1/2 oz butter, softened
1/2 cup brown sugar
1/2 cup plain flour
1 teaspoon cinnamon
2 1/2 cups fresh breadcrumbs
1/3 cup milk
1/2 cup sultanas
1/2 cup raisins
1/2 cup dried cranberries
1/3 cup sliced almonds
1/4 cup brandy
mix together butter and sugar.
add eggs, one at a time and stir well.
add the rest of the ingredients and mix well.
spoon batter into two small buttered cake tins.
place the tins in a deep baking dish and pour in enough boiling water to come half way up the sides of the tins.
place in oven and bake for about 1 1/2 hour or until the puddings are firm to touch.
serve with fresh berries tossed in a little sugar on top
