the quality of the meat is what this dish is about, so buy the best you can get. buy a thick whole piece of beef filet of about 500 g. chop the meat very finely with a long bladed knife. place the meat in a bowl, mix it with salt and pepper to taste, about 125 ml olive oil and the juice of half a lemon. place on plates and serve with wedges of lemon and shavings of parmigiano. garnish with some green leaves and serve immediately.
