mark bitterman, founder of this shop, is on a mission to change the way people think (both home cooks and chefs alike) about salt. he believes that most of the chemically processed and industrially produced salt used in homes and restaurants is an abomination of what salt should be, in his words: 'pure, natural, beautiful, and reminiscent in flavour of where it actually comes from the sun and the sea'. in the meadow, the shop, bottles small and large of salts from all over the globe adorn the floor-to-ceiling plank selves. there's fleur de sel from various makers and regions, versions of sel gris, variations of flake salt, inky black volcanic salt and more and more. images : michael marquand.
