pasta with truffles, a simple and classic way to serve up truffles.
recipe & styling: paul lowe, image: colin cooke
1 pound/450 g spaghetti
1/4 cup/60 ml good quality olive oil
1 cup/110 g grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
bring a large pot of salted water to a boil, cook the spaghetti according to package to al dente.
drain and set aside.
in a bowl mix together pasta, olive oil, parmesan, salt & pepper
shave truffles over the dish and mix gently.
serve warm.
serves 4
