this is the dish that won sweet paul's 'my happy dish' recipe contest in his fall issue. the recipe came from karen hale, it's made and photographed by our good friend sweet paul himself, according to him it's delicious! karen says about her creation: it's the first recipe i make with our fresh picks from the day. after a summer of grilling and salads it's a comfort food indulgence we love. it's known in my house as 'candy meat'.
candy pork with apples & pears, serves 8
2 lbs/1 kg pork loin
1/2 cup/ 90 g light brown sugar
1 cup/250 ml real maple syrup
1/2 tbsp nutmeg
1 tbsp cinnamon
1/2 tbsp cumin
1/2 tbsp ginger
2 bay leaves
pinch of thyme
pinch of rosemary
preheat the oven to 360f/180ºc
place pork loin in 9"/23 cm x 12"/30cm baking dish and rub all sides with brown sugar.
pour half the maple syrup over the pork
cut apples & pears into wedges and place on and around pork.
in a bowl mix the nutmeg, cinnamon, cumin and ginger and sprinkle on top of pork and fruit.
top with bay leaves, thyme & rosemary, then add the remaining maple syrup on pork and apples.
bake until cooked through, for about an hour.
best served with garlic mashed potatoes ('because i encourage you to use the 'sauce' that's cooked in the pan as a gravy on the potatoes', according to Karen).
