muesli bars, i usually make them like this but the variations are endless. image: dietlind wolf, recipe: leonoor ottink
170 g dates, pitted and chopped
3 tbsp maple syrup
100 g naturel peanut butter
150 g nuts, chopped 
140 g oatmeal
2 tbsp dried cranberries, chopped
2 tbsp raw chocolate chips
place oatmeal, nuts, cranberries, dates and chocolate chips in a bowl.
warm the peanut butter with the maple syrup over a low heat and pour it over the date-oatmeal-nuts  mixture.
stir until thoroughly mixed. line a baking pan for example of 20 x 20 cm with parchment paper. i use a square baking tin for brownies of that size, but anything similar will do. 
add the mixture to the pan and flatten with the back of a spoon. 
cover with parchment paper and let it set in de freezer for 2 minutes.
chop them up into bars and keep in an airtight container in the fridge.
