lentils with sausages, the perfect dish for cold february days…recipe: leonoor ottink, image: hotze eisma
4 fresh porc sausages of good quality
1 small salami or chorizo sausage, about 225 g
2 onions, chopped
4 carrots, chopped
2 dried chillies, crumbled
4 cloves of garlic, thinly sliced,
250 g lentils, preferably du puy
2 small cans of tomatoes
bunch of parsley
3 bay leaves
olive oil
salt & pepper
cut the chorizo or salami in small cubes.
chop the parsley stalks, set the leaves apart. 
fry the onions with the parsley stalks until soft.
add the garlic, crumbled chillies and the chorizo or salami and fry for 5 minutes, stir occasionally.
in another pan brown the porc sausages on all sides.
stir in the canned tomatoes and the lentils and bring to a boil. add the porc sausages, the bay leaves and a splash of water and let it simmer for 20-30 minutes, or until the lentils are done. check regularly if you need to add more water. 
taste for salt, sprinkle with pepper and serve with a green salad and good bread to soak up the juices.
