baking cookies, isn't that the best thing to do on a day like this? sort of in between all festivities... this is nigella lawson's unsurpassed recipe for edible christmas decorations. image reblogged from ginny branch stelling on pinterest
300 gr plain flour
pinch of salt
1  tsp ground cinnamon
1/4 tsp ground cloves
2 tsp freshly ground black pepper
100 gr soft butter
100 gr soft dark brown sugar
2 large eggs, beaten,
4 tbsp runny honey
preheat the oven to 170º.
line 2 baking sheets with baking paper.
combine the flour, salt, baking powder, cinnamon, cloves and pepper in a food processor and, with the motor on, add the butter and sugar, than slowly, the beaten eggs and runny honey, though don't use all of this liquid if the pastry has come together before it's used up.
form 2 fat discs and put one, covered in cling film in ht fridge while you get started on the other.
dust a work surface with flour, roll out take disc, also floured, to about 5 mm thick.
cut your own decorations with cutters of your choice.
re roll and cut out some more, setting aside the residue form this first disc, well covered, while you get on with rolling out the second. when you've got both sets of leftover clumps of dough, roll out and cut out again until all dough is used up.
arrange the pastry shapes on the lined baking paper and cook for about 20 minutes.
transfer to a wire rack and leave to cool.

fallen chocolate cake, this is such a great cake and without flour, so it's great for passover. since the cake is very soft, it will need to be served with a spoon. image: colin cooke, recipe: paul lowe
250 gr dark chocolate, chopped
240 gr butter
6 eggs, separated
300 gr sugar
preheat the oven to 190º c.
melt chocolate and butter au-bain-marie.
beat the egg yolks and sugar in a bowl until pale.
combine the egg mixture and the chocolate.
whisk the egg whites into stiff peaks.
fold them gently into the chocolate mixture.
pour the batter into 4,5-5,5 cm pie tins.
place in the oven and bake for about 16 to 20 minutes
the cake will rise and fall (it's supposed to fall).
serve warm with whipped cream or ice cream.
serves 6

apricot and apple filled pork roast. recipe and food styling paul lowe. image: susanna blavarg
2 tablespoons butter
70 gr dried apricots, chopped
1 large apple, peeled and chopped
85 gr  dried prunes, chopped
1 small yellow onion, chopped
2 shallots, chopped
1 kg pork roast, bone in
salt and pepper
8 slices bacon
fresh rosemary
olive oil

preheat oven to 190º 
melt the butter in a pan and add apricots, apple, prunes, onion and shallots, saute until you have a dry soft mixture. cool off a bit. 
take your roast and make a hole in the middle of the meat with a thin sharp knife and fill the cavity with the apricot mixture. 
rub the meat in with salt and pepper. 
place the bacon in strips on the top of the roast, add the rosemary on top and bind together with kitchen twine. 
place in a roasting dish, pour over some olive oil and cook for about 1 1/2 hour.
let the meat rest 10 minutes before cutting it up.
serves 4

now in amsterdam until january 19th,  the amsterdam light festival 2013/2014. the city of amsterdam is enriched and illuminated with art during the darkest time of the year, on this photo you see the temporal tower by artist todd hulzen, a remaining of the 'herring packer's tower' that was torn down at the beginning of the 19th century. take a walking route or, like us, a boat route. we'll be going on our own (open!) boat with both our families, with thermo underwear, blankets sheepskins, hot chocolate for the kids and cognac for the grown ups…...

hmmmmm…..meringues, definitely one of my favorites for dessert, and so easy to make, inspiring image, reblogged from hannas room. i can't read the recipe that goes with it so i give you my own.
preheat the oven to 100ºc.
place 4 egg whites in a bowl.
whisk on medium speed until the whites form peaks.
while mixing, gradually add the sugar and a pinch of salt.
turn the mixer up to the highest setting and whisk for about 8 minutes, until the mixture is glossy.
line a baking tray with baking paper and form dots of the meringue mixture with 2 spoons on to the baking tray.
place in preheated oven and bake for about 2 hours or until crisp on the outside and still a bit sticky inside.
let them cool completely.
spoon 1-2 tbsp blackberry jam on each meringue. finish few blueberries on top and some mint leaves.

i love the idea of making preserves of winter fruit and veggies, like chestnuts and oranges, or like in this recipe, jam made of pumpkin and vanilla. image: christel exelmans
600 g pumpkin, peeled and cut into small cubes
juice of half a lemon
400 g sugar
1 vanilla pod
1 clementine and juice of 3 clementines
scrape the seeds out of the vanilla pod.
cut the peel of the whole clementine and cut into small pieces.
place all the ingredients, including vanilla seeds and pod, in a bowl and set aside for 24 hours.
bring to the boil the next day and let it simmer while stirring all the time, for 15 minutes.
remove the foam and pour the jam into sterilized jars. cut the vanilla pod into pieces and add to the jars.
cover and turn upside down for a few minutes.
