steak fiorentina, that's what we put on a barbecue in tuscany, italy, with my brother and our families. put some prosciutto, salami, and olives on a plate, make a salad caprese of tomatoes, basil and buffalo mozzarella, and serve as antipasti. buy 2 steaks of about 400 gr each, cook them on the barbecue until rare or medium, sprinkle with sea salt and freshly ground pepper, drizzle with a few drops of olive oil and serve with a rucola salad. serves about 8. photo: mikkel vang, (hardly a) recipe: leonoor ottink

make a chocolate tart with raspberries for dessert after a summer night dinner. photos: armelle habib and martin lof. recipe: leonoor ottink
150 gr dark chocolate, chopped
150 gr soft butter
6 large free range eggs
100 gr self raising flour
4 tsp cocoa powder, sifted
300 gr. raspberries
1 tbsp raspberry jam
preheat the oven to 180ºc.
line a 23 cm springform with baking parchment and grease with the extra butter.
melt the butter with the chocolate while stirring, in a bowl over a pan of boiling water, au-bain-marie. make sure the water doesn't touch the bowl. set aside.
beat the sugar with the eggs until pale and about tripled in volume.
mix the self raising flour with the cocoa powder and gently fold this into the eggs and sugar mixture, followed by the chocolate and butter. finally fold in the raspberries and raspberry jam.
pour the batter into the prepared springform and bake for 45 minutes.
let it cool on a wire rack.

ecuador, the land of the origin of cocoa. misty clouds cover a beautiful landscape shaped by black lava, volcanoes and a green, thick forest of plants. this is one of the world's places that is most dense with vegetation. it is here in the amazon, that the cocoa tree has its origin. previously, it was believed that the cocoa tree had it's origin in mexico, but new findings show that it is from this primeval forest it came. maybe that is why the chocolate from ecuador is among the finest in the world. there are beans here that grow in different regions, and therefore taste very different. photos: susanna blavarg

tapenade, at the end of a warm summer day, with chunks of good bread, some raw veggies like cucumber, radish, carrots and a glass of chilled white whine...... :
about 250 gr. black olives, pitted, the best ones are taggiasca olives
1 garlic clove, crushed
1 tsp dijon mustard
10 sprigs of fresh thyme, leaves removed from the sprigs
1/2 tbsp fino or dry sherry, like manzanilla
1 tbsp capers, preferably the salted ones ( soak them in water to get rid of the salt)
a squeeze of lemon juice
2-4 tbsp good olive oil
salt & pepper
put all the ingredients except the olive oil and salt & pepper in a kitchen machine or food processor and process for a few seconds. add the olive oil and salt & pepper and process for a few seconds more until a paste.
