thai yellow curry with chicken, easiest recipe in the world! photo: leonoor ottink

500 gr. free range chicken breast, cut in pieces
3 cloves of garlic, sliced
1 onion, cut in quarters and each quarter cut in half again
3 tbsp of thai yellow curry paste (available at asian supermarket)
6 dl canned coconut milk
1 potato, peeled and cut into cubes
1 stalk of lemongrass, outer leaves removed, crushed a bit with side of a knife
2 tbsp oil

heat the oil in a wok over medium high heat. add the onions and garlic and cook for 3 minutes. add the curry paste and cook for 1 minute. add half of the coconut milk and the lemongrass, bring to a boil and let it cook over high heat for 5 minutes, stir frequently. add the rest of the coconut milk, bring to a boil again and stir in the chicken and potato. lower the heat and let it simmer for 20 minutes, until chicken and potato are tender. 
serve with steamed rice and stir-fryed vegetables with oyster sauce.

a book about milk bars that triggered us. not surprising when you call your own blog milkbottle..... we found out about this book via inside out magazine, we just love the idea that somebody makes a photo book of 'oldfashion' milk bars which hardly exist anymore. have a look yourself, it's a great book!

 pot-au-feu, re-discovering classic french cooking...

literally a pot-in-the-fire, a stew made of several sorts of meat and vegetables, simmering for hours, until the meat is very tender and all the flavors merged together, served with 2-3 sauces. this is a simplified version, but still delicious. photos:  michael marquand en leonoor ottink

1 kg beef rump roast
2 branches of celery
3 carottes
2 leeks
2 large onions
3 bay leaves
bunch of parsley
bunch of thyme
4 garlic cloves
8 whole peppercorns
sea salt
season vegetables, 1-2 pieces for each person, in winter for example quartered carrots, leeks cut in thumb-like pieces, quartered turnips, quartered potatoes

tie the parsley, thyme and bay leaves together with kitchen string
put all the ingredients in a large pot, preferably cast iron, cover completely with water or broth.
bring to a boil over medium heat, reduce the heat and let it simmer, partially covered, for 3 hours, skimming occasionally.
take out the meat and strain the broth through a sieve.
return the broth to the pot and add the meat again, together with the season vegetables.
bring to a boil and let it simmer until the vegetables are tender.
take out the meat and cut into slices, arrange on a large platter together with the vegetables and spoon some of the broth over it.

serve with crusty bread and mustard, horse-radish sauce, or.......the best of all; with classic french 'sauce alsacienne'; a mayonnaise made of hard-boiled egg yolks with herbs, capers and the broth, recipe will follow later!

don't throw the remaining broth away,  pour it through a sieve and keep in portions in your freezer, use it for risotto, stews etc.

winter minestrone soup, good idea for these cold months, all veggies in one pot, we love it! photo: susanna blavarg

1 medium onion, chopped
1 bay leaf
2 tablespoons olive oil
1 large carrot, thinly sliced
1 celery rib, thinly sliced
1 tablespoon tomato paste
500 gr. sweet potato, peeled, in small cubes
500 gr. potatoes, peeled, in small cubes
500 ml. vegetable or chicken broth
350 ml. water
60 gr. frozen peas
2 tablespoons chopped fresh or frozen dill
black pepper & salt

heat the oil and cook onion, bay leaf and 1/2 tsp salt over medium-high heat, stirring occasionally until softened, about 5 minutes. add carrot and celery and cook, stirring until softened about 3 minutes.
stir in tomato paste and cook, stirring 1 minute then add sweet potato, potatoes, broth, water and 1/4 teaspoon pepper. let it simmer, covered, until vegetables are tender, about 20 minutes. discard bay leaf. puree about 250 ml. soup in a blender (use caution when blending hot liquids!) and return to pot. bring to a simmer, then stir in peas and dill and cook until peas are heated through, about 3 minutes. season with salt and pepper.
