the chili peppers on my roofgarden grew exceptional good this summer,  i combined them with the last tomatoes to make indonesian 'sambal tomato'. photo: mikkel vang, recipe: leonoor ottink

8 chili peppers, sliced (with seeds)
2 onions, chopped
6 tomatoes, chopped
2 teaspoons shrimppaste (trassi)
30 gr sugar
2 teaspoons vinegar
3 tbsp oil
purée the peppers, tomatoes, onions and shrimppaste in a food processor. heat the oil in frying pan, fry the pepper-tomato mixture a few minutes. add the sugar and vinegar, let it boil gently for 2 minutes.
ladle in sterilized jars and keep refrigerated
