WEEKEND INSPIRATION

yesterday was the 21st of june, the longest day of the year, now is the time to spend long summer nights in the garden.....and eat rhubarb crumble for desert. this is how it grows in my garden. some eat it as a vegetable, for me it's more like fruit. strawberries with rhubarb is a fantastic combination, especially in this crumble, one of my favorite recipes with rhubarb.

400 gr. rhubarb, cut in small pieces
250 gr. strawberries, halved
150 gr. butter, cut in big chunks
200 gr. sugar
140 gr. flour
60 gr. oatmeal flakes
1 tsp baking powder
a pinch of salt

put the butter in the freezer, preheat the oven to 180ÂșC.
place the strawberries with the rhubarb in a shallow ovenproof dish, i use an oval one, 20 x 30 cm.
place the flour, sugar, salt, baking powder, oatmeal flakes and the butter form the freezer in the kitchen machine. pulse for 5 seconds, check, it should resemble coarse breadcrumbs, pulse for a few seconds more if necessary. spread the crumble evenly over the fruits and bake for about 40 minutes or until golden. allow to cool and serve as a delicious desert. photo garden reblogged from rural girl via the chaines, photo rhubarb and recipe, leonoor ottink
