pickled lemons. photos: susanna blavarg, recipe for 1 jar of salted lemons

3 organic lemons
2 1/2 tablespoons salt
about 1 1/2 dl olive oil

wash the lemons and cut them into slices. sprinkle with salt and place in colander. allow to stand overnight or for about 8 hours. place the lemon slices in a large glass jar, pouring in the olive oil bewteen the layers so that it covers the lemons and there are no air bubbles. allow to mature for about 3 weeks.
