ah, all these summer fruits...! make a clafoutis with cherries, or bake my favourite summer cake, with nectarines and raspberries, a variation on a recipe from donna hay's book 'off the shelf, cooking from the pantry' photo: john dummer

125 gr. soft butter
225 gr. sugar
2 eggs
180 gr. flour
1 tsp baking powder
3 nectarines, cut in small wedges
200 gr. raspberries, fresh or frozen
2 tbsp confectioner's sugar

preheat the oven at 160 ÂșC.
line a 22 cm baking tin with baking paper. beat the butter with the sugar until light and creamy, add the eggs and mix well. stir in the flour and baking powder.
pour batter in the baking tin. place the nectarine wedges and the raspberries on top. sprinkle with 1 tbsp of the confectioner's sugar and bake for about 1 hour, test with a skewer, it should come out clean. remove from the form and sprinkle with the remaining sugar. makes a great desert!
