mediterranean lamb with potatoes, really easy to make, see recipe on the next page. photo: armelle habib
ingredients:
1 whole leg of lamb, about 2 kg for 4-6 people
2 sprigs rosemary, finely chopped
2 tsp dried oregano
3 cloves garlic, crushed
juice of 1/2 lemon
60 ml olive oil
freshly ground black pepper
salt

8 large size potatoes, peeled and cut length ways
2 heads garlic, sliced across the middle
a handful  fresh oregano leaves, or 1 tsp dried oregano
4 fresh rosemary sprigs, finely chopped
1 lemon, juiced
1 lemon, sliced
olive oil
freshly ground black pepper
salt

preheat oven to 180Âșc.
combine rosemary, oregano, garlic, pepper, salt, lemon juice and oil together in a bowl.
place lamb in large roasting tray and rub mixture into skin.
put in the oven for required cooked time (see notes below).

place sliced potatoes and lemons a in bowl, add oregano, rosemary, salt, lemon, pepper, olive oil and toss. transfer into the pan with the lamb, 45 minutes before lamb is cooked.
allow to rest 20 min before serving.

notes:
roast lamb for 15 minutes per 500 gr, plus an additional 10 minutes more.
