olive oil and herb marinated feta cheese

sterilized jars for canning, one jar of 500 ml or 2 jars of 250 ml 
225g feta cheese
80 ml extra virgin olive oil  for one jar, or more if dividing into more than one jar for gifts
fresh thyme and rosemary (feel free to add any other fresh herb that you like!)
1/2 teaspoon crushed dried chili pepper flakes
1 tablespoon of freshly sliced lemon rind
fresh ground peppercorn

add layers of feta cheese and herbs into a clean jar. pour olive oil over the top and add chili flakes, lemon rind and ground pepper.
seal jar tightly and gently turn over once or twice to combine ingredients, refrigerate.
garlic is not recommended in the marinated feta recipe as it can be a health concern.
marinated feta keeps best in the refrigerator even if all of the cheese is covered with the olive oil.
serve in big chunks with bread, crumbled over tomatoes and basil, or on top of salads and pizza.
when cheese is finished the remaining oil is a great marinade for olives and in your favorite pastas.
