there's nothing more simpler than a basic roast chicken, everyone can do it.  photo: eric spakman

1 free-range chicken, about 1,2 kg
1 lemon
2 garlic cloves, peeled
sea salt & pepper

preheat the oven to 190ºc.
rub the chicken all over with halve the lemon and generously season with salt & pepper.
put the other halve of the lemon with the garlic cloves in the cavity.
put the chicken in a roasting tray and cook in the preheated oven, breast-side down, for 10 minutes. turn the chicken around and roast for another 10 minutes. turn the chicken back, breast-side down again and roast for about 35 minutes. turn the chicken breast-side up and roast for 10 minutes or until the chicken is cooked. check by piercing the thigh, the juices should run clear, if not roast for another 10 minutes and check again.
leave to rest for 15 minutes before serving.
