home made scones for the weekend, who doesn't want that? and.....easy to make, in the oven in less then 30 minutes! photo: mikkel vang
250 gr. self raising flour
2,5 tsp baking powder
50 gr. cold butter, chopped
3 tbsp sugar
0,75 ml milk
1 free range egg
pinch of salt

heat the oven to 220ºC. lightly grease a baking sheet.
mix together the flour, sugar and salt and add the butter. use your fingertips to rub it into the flour, it should resemble fine breadcrumbs. beat the egg with the milk, keep 0,5 tbsp of milk apart.
add the egg-mixture and lightly knead to a soft dough. roll out on a lightly floured surface until 2,5 cm thick. use a 6 cm round cutter and cut out 8 rounds. place the scones on the baking sheet and brush them with the remaining milk. bake them for 10 minutes or until cooked when tested with a skewer.
serve with clotted cream and home made jam, we totally love them with yesterday's marmalade!
