paletas, delicious after a 'heavy' winter meal, how to make it go to read more, rather simple! photo: hector sanchez,  food and styling: paul lowe

mango paletas with mint
makes 4-6

2 1/2 cups mango flesh
1/4 cup sugar
3 tablespoons lime juice
1 teaspoon finely chopped mint

place mango, sugar and lime juice in a blender and whirl until smooth.
add mint and stir
place the wooden sticks in the molds and pour the mixture
freeze until solid
should be used within 1 week

watermelon and chili paletas
makes 4-6

4 cups chopped watermelon
3/4 cup water
3/4 cup sugar
small dried serrano cili
2 tablespoons lime juice

bring a small pot of sugar, water and chili to the boil, stir until the sugar is dissolved, cool.
remove the chili.
place the syrup, watermelon and lime juice in a blender and whiz until smooth.
place the wooden sticks in the molds and pour in the mixture.
freeze until solid.
should be used within a week
