stewed pears, this appears to be a typical dutch dish, where very very hard pears, so called 'gieser wildeman', are being stewed in wine until soft and served as a vegetable, recipe on the next page, photos: mikkel vang.
1,5 kg pears, preferably 'gieser wildeman', but normal pears will do just as well (they'll take less time)
1 cinnamon stick
peel of one lemon
1 tbsp sugar
250 ml red wine
water

peel the pears but leave them whole.
put them standing up close to each other in a tightly fitting pan, make sure they keep standing up.
add the cinnamon stick, lemon peel, sugar and wine, add enough water to just cover the pears until the pears.
bring to a boil, cover the pan and let them simmer until tender, this will take round and about 60-90 minutes.
