oh, they are so beautiful! and at their best when you need them the most, in the middle of winter.
eat them just like that, or bake an orange-almond cake, this is a great recipe that turns complete oranges, boiled and pureed, into a divine, sweet and moist cake, pure magic! photo: ellen silverman
recipe: leonoor ottink


cake:
2 oranges
125 gr. butter
225 gr. sugar
200 gr. ground almonds
60 gr. all purpose flour
5 tsp. baking powder
5 eggs


sirup:
250 ml water
120 gr. sugar
zest of 1/2 orange
juice of 1 orange
4 cardamom pods

preheat the oven on 180 Âșc.
grease a 24 cm springform and line with baking parchment.
put the oranges in a saucepan, cover with water and simmer for 10 minutes.
cut the oranges in 4, remove the pips.
put the oranges with all the other ingredients in the kitchen machine and blend until a smooth mass.
pour into the springform and bake in the middle of the oven for about an hour, test with a skewer into the middle of the cake, it should come out clean.
let the cake cool on a rack.

combine all the ingredients for the sirup, put in a small sauce pan and cook for 10 minutes on a low flame. punch holes in the cake with a fork and pour 3-4 spoons of the sirup on the cake.
cook the rest of the sirup for about 20 minutes more, and let it cool.

serve the cake with whipped cream and drizzle with sirup.
makes a great dessert after the beef of last week!
